Cooking with Catie Reproducing Favorite Restaurant Dishes Cold Weather Comfort Classics

We’re cuddling up here in the Hudson Valley, as the first snow of the season has arrived this week!

I’ll be sharing a series of vegan Cold Weather Comfort Classics, which prove that plant-based versions of my favorite restaurant recipes can be just as decadent and delicious as the classic versions.

I’m kicking off with Croque Monsieur, which is a staple in French bistros in New York City and restaurants around the world.

This is a perfect lunch or late-night treat, that pairs well with a fresh salad and glass of red Bordeaux.  

This recipe is dairy free, vegan, and depending on your choice of bread, gluten free as well.

Serves two.

Prepping and cooking time is around 20 minutes.

Gather your ingredients:

4 slices of bread

8 ounces of shredded off-the-block gouda vegan cheese

2 vegan deli slices

Dijon mustard to taste

Build the bechamel sauce:

1 tablespoon flour

1 tablespoon flour

1 tablespoon vegan butter

1/2 cup plain plant-based milk

Salt and pepper to taste 

Add the warmth:

Melt vegan butter in a small pot on medium heat.

When butter is melted add in flour.

When it starts to bubble whisk in almond milk.

Reduce heat to low and gently simmer for 3 minutes or so.

Stop cooking before the sauce turns golden.

Add seasonings (and Herbes de Provence for a South of France twist!) 

Into the oven: 

Lay two pieces of bread on a baking sheet (lay down parchment paper for easier clean up).

Apply a layer of bechamel sauce, then cheese, deli slices, dijon and more cheese.

Top with the other two pieces bread and add more bechamel sauce and cheese.

Bake at 400 for 10 minutes, and broil for that bistro vibe.

Plate:

Place the sandwich on your favorite plate, and add a salad with fresh greens and herbs, tossed with a vinaigrette dressing.

Enjoy with a glass of Bordeaux or fresh apple cider – and a friend!
